It is taking me a while to get into this blogging thing, sometimes I even forget we have a blog. However, I have heard it can be addicting but I am just not there yet. So far this summer has been quite a busy one. Just a few of the interesting things as of late:
1. Scott and I have started building our own furniture. We have built a console table, 2 end tables and a coffee table. We have many more projects in store, but like all things we need moderation. So after building a few bedside tables and a desk, my furniture building will be on halt for a while.
2. Apparently the dog next door heard that Scott and I are wanting to adopt, so he came over to fill the position. Let's just say I was not exactly thrilled. Now we have 2 dogs and 2 cats. We are still not 100% sure that we will keep Choco , but for now he is a great companion for our little Buddy.
3. Our home inspection was completed on July 15th and our profile was posted on itsaboutlove.org . So Scott and I are officially prospective adoptive parents. We are so excited that the process has at least started. A few months ago, one of my facebook friends said she was "nesting". I had no idea what that term meant at that time. However, with all of the excitement the adoption process, I have now started "nesting". It is a very slow process for me, but I now know exactly what the term means.
4. Scott is so proud of our garden, so much so that he even took our caseworker from LDS Family Services around to see it. Despite the fact that we really didn't know what we were doing when we were planting, our garden has turned out quite well. Given it is mostly squash (of unknown varieties... which take no effort to grow), the corn, tomatoes, peas and peppers all have done very well. I love gardening.
5. We have had several friends and family coming and going this summer. We love having guests. It gives me reason to put extra effort into meals and how we spend time together. WE are so grateful to have a such a wonderful family and such amazing friends.
6. Canning and preserving has already started for me. I made several quarts of applesauce this month. I also tried my hand at sugar-free strawberry and blueberry jams. The strawbery jam turned out amamzing!! One recipe I found said, that by putting some sugar-free strawberry jello in with the fruit mixture the falovr is greatly enhanced. We loved how this turned out, and it did not take a lot of jello to bring out the flavor. Our blueberry jam was just for fun because we found a place close to home where we could pick our own blueberries. Peaches are just starting to be picked, and I am so excited to start canning peaches. They will be so good in the winter... if they last that long.
At this moment, these six actities and events are the highlight of our summer. I will be more dilligent about making posts, so they do not turn out to be so long!

I didn't know you had a blog! Exciting! I hope to see an update soon! I've picked up a lot of canning lately too, I love it, so time consuming, but so rewarding! I'm glad to hear more about your life!
ReplyDeleteThanks Jen for the blog update, what fun to be able to hear about your summer. Yes "nesting" isn't that a funny saying? You have always had that "nesting" instinct, a natural mom. The way you love to get things prepared,and fix things up, even before the event has actually happened. I love that you have already picked out a diaper bag. I look forward to hearing more about your journey!
